Looks good & easy right?
The baked sweet potatoes are really microwaved and the steamed green beans are generally Green Giant steamer bag green beans. When we're not in the middle of our CSA box season (see here for explanation: Clay Bottom Farm) we do a lot of freezer veggies. I only manage to grow enough to make one or two meals in a summer so home-grown stored veggies aren't an option for me. I'm just not that motivated or good at gardening. And the green leafy salad is a standard in our house. We try to have them at almost every meal.
I'll report back tonight on how it went, and how ours looked.
[general food goals for our house: has to taste good, local/organic is better, healthy]
----
Augmentations:
I bought boneless, skinless chicken breast. The thighs were more expensive this time. I used the olive oil, a hint of salt, the pepper, and added garlic powder, dried basil, & dried parsley- just because I think it'll be good. I'm cooking 5 chicken breasts which is a lot for our family. Usually 3 is enough for our gang (probably more than enough from a proper serving size perspective). But I'm counting on leftovers that I can put in a salad for lunch, or put some w/ cheese in a wheat tortilla for a quesadilla.
How ours turned out:
The chicken was not dry, but taste-wise, pretty boring. But, it was still good. Daddy- thumb's up, Son- thumb's middle, Daughter 1- thumb's up, Daughter 2- thumb's down, Mommy- thumb's middle.
