In general, I don't decide what's for supper until about 5 minutes before I start cooking. But tonight, we've got company coming. I tend to plan ahead if there's going to be a non-resident eating with us. So... drum roll please....Tonight's Menu:
Butternut Squash Lasagna (from Cooking Light) with a Spinach, Pear, & Bleu Cheese Salad, and a loaf of crusty on the outside/soft on the inside bread.
I'll let you know how it goes. I made a lasagna with sweet potatoes in it once and it turned out pretty good.

Well, duty calls. I handed out coloring books & crayons, but I hear the piano in odd notes which means someone might be trying to color our foster piano.
p.s. Recipe report- took exceedingly long to get it prepped, but after that, it was worth the wait.

All in all, it was a good lasagna, but not really the WOW lasagna the reviews on the website claimed. Not for us anyway.
And it produced copious amounts of lasagna. That's a good thing if everyone loves it, but if I'm the only one willing to eat the leftovers- not so much.
